Thymus vulgaris - Thyme Common

thyvulgarisstems

Thyme Plant

Thymus vulgaris (common thyme, German thyme, garden thyme or just thyme) is a species of flowering plant in the mint family Lamiaceae, native to Europe .
Growing to 15–30 cm tall by 40 cm wide, it is a bushy, woody-based evergreen subshrub with small, highly aromatic, grey-green leaves and clusters of purple or pink flowers in early summer.
It is useful in the garden as groundcover, also as an ingredient in cooking and as an herbal medicine. It is slightly more spicier than oregano and sweeter than sage.

Thyme Features:

Sun Exposure: Full Sun | Part Sun
Soil Type: Sandy | Loamy
Botanical Name: Thymus vulgaris
Plant Type: Herb
Planting Thyme

It's hard to grow thyme from seeds because of slow, uneven germination. It's easier to buy the plants or take some cuttings from a friend.

For a head start, plant the seeds/cuttings indoors 6 to 10 weeks before the last spring frost.

Plant the seeds/cuttings 2 to 3 weeks before the last spring frost in well-drained soil about 9 inches apart. For best growth, the soil should be about 70ºF.

The plants should grow 6 to 12 inches in height.

In the garden, plant thyme near cabbage.

Care

Water normally and remember to trim the plants.

Prune the plants back in the spring and summer to contain the growth. You can take some cuttings and plant them indoors in pots, too.

If you have cold winters, remember to lightly mulch around the plants after the ground freezes.

Love - In - A - Mist Nigella damascena

Nigella damascena

Nigella

Nigella damascena (love-in-a-mist,ragged lady) is an old cottage garden flower, good for short-term massed bedding and for drying. For many years 'Miss Jekyll' was the only widely available variety, and it is still popular for its dependable masses of sky-blue flowers. These last for about eight weeks, and it is worth deadheading or sowing a later batch to extend the season. Sowing in autumn or in March, in a cold frame in paper pots in cold districts, produces early flowers. In windy gardens, support the stems with twiggy sticks.

The name damascena relates to Damascus in Syria. The plant's common name comes from the flower being nestled in a ring of multifid, lacy bracts. It is also sometimes called devil-in-the-bush.

Caraway (Carum carvi)

Caraway

Caraway (Carum carvi), also known as meridian fennel,or Persian cumin,is a biennial plant in the family Apiaceae, native to western Asia,Europe and Northern Africa.
The plant is similar in appearance to other members of the carrot family, with finely divided, feathery leaves with thread-like divisions, growing on 20–30 cm stems. The main flower stem is 40–60 cm tall, with small white or pink flowers in umbels. Caraway fruits (erroneously called seeds) arecrescent-shaped achenes, around 2 mm long, with five pale ridges.
Caraway has been used as a medicine and a flavoring since the early Egyptians. Its cultivation is mentioned in the Bible and archeological sites dating back 5000 years have been found to contain caraway seeds in food remains. Caraway is a very attractive plant with its feathery foliage and caraway fragrance and flavor throughout. Flowers in umbrella shaped clusters of white or pink produce seeds the second year to use in sauerkraut, rye bread, cheeses, vegetables and soups. Leaves are tasty in soups, salads and veggies.
Family: Apiaceae
Genus:Carum
Species: C. carvi

Caraway seed nutrition

In the traditional Europian cuisine, caraway seed is one of the dominant spice featuring in several savory dishes. Strongly aromatic, caraway is a member of parsley or Umbelliferae family; a large family of herbs that also includes commonly known herbs and spices such as dill, anise, fennel, cumin, etc.
Caraway is grown extensively all over Europe, North Africa, and Asia Minor regions. This biennial, herbaceous plant blooms creamy flowers in umbels once in every two years. It grows to about 2 feet in height and bears small feathery leaves. Caraway seeds, having similar in appearance as that of cumin, are crescent in shape, dark brown, with up to five stripes (ribs) running lengthwise.
Caraway generally harvested during early hours of the day to avoid spilling of its seeds on the ground. They are then staked in bundles and allowed to dry under sunlight, and their seeds then threshed, either mannually or using machines.

Medicinal uses

Caraway water is sometimes used in treating flatulence and indigestion in traditional medicines, especially used to relive infantile colic.

It is also used in pharmaceuticals as flavoring agent in mouthwash and gargle preparations.

Caraway extraction is used as a rubefacient (to soothe muscle sores), clear the cold, as a remedy in bronchitis and irritable bowel syndrome in many traditional medicines. (Medical disclaimer).

Culinary uses

Caraway seeds have a warm, sweet, and slightly peppery aroma when squeezed between index and thumb fingers. Its seeds are used extensively in European and Mediterranean cooking.
In order to keep fragrance and flavor intact, caraway seeds are generally  roasted gently under light heat and ground just before using them in a recipe.

Roman chamomile Vs German Chamomile

Both Roman chamomile (Chamaemelum nobile, formerly Anthemis nobilis) and German chamomile (Chamomilla recutita, formerly Matricaria chamomilla) are aromatic herbs cultivated for their essential oils and for use in teas, cosmetics and medicine.

They have different growing habits and distributions. Roman chamomile, also known as English chamomile, is hardy in U.S. zones 6 through 9. German chamomile is an annual.

Its native distribution is Europe and northern Asia.

Roman Chamomile

Roman chamomile grows to 12 inches tall and has hairy stems and finely cut, threadlike, green leaves that have a scent similar to apple and pineapple. Daisy-like flowers grow 1/2 to 1 inch wide, with white petals and a yellow center. Distilled oil from Roman chamomile is clear to pale yellow. Native to the Middle East, southern and western Europe and eastern Africa, Roman chamomile is cultivated in Argentina, England, France, Belgium and the United States.

German Chamomile

German chamomile is taller, reaching 24 inches, and has hairless stems with threadlike, more sparse and less ferny leaves than Roman chamomile. The plant is less spreading. Flowers are similar but larger -- 1 to 2 inches wide. The yellow center is conical and hollow, smelling also like apple or pineapple when crushed.

The essential oil is dark blue. Also known as Hungarian chamomile, the plant is cultivated in Hungary, Egypt, France and eastern Europe.
